Pectin Molecular Weight and Yogurt Texture: a Non-Linear Relationship

A study fractionating citrus pectin by molecular weight found that gel strength in yogurt systems does not scale monotonically with chain length.

Key findings

  • The intermediate fraction (~20 kDa) produced weaker, more flowable gels, while both the ~40 kDa and ~7.8 kDa fractions reinforced the protein network (study conditions).
  • Gel strength therefore depends on the molecular-weight distribution — 'higher MW means stronger gel' does not hold.
  • The authors link the effect to how different chain lengths interact with the casein network during acidification.
