A 2026 review comparing nine extraction methods shows that the process route — not just the raw material — determines pectin's molecular structure, and therefore its functional behaviour.
Key findings
- Citric- and oxalic-acid extraction routes were associated with higher yields, high homogalacturonan content and a high degree of esterification, together with strong oil-holding capacity (review conditions).
- Deep-eutectic-solvent and enzymatic routes better preserved RG-I side chains, which the authors link to water-holding and antioxidant-related properties.
